Heidi brought this over for us during chemo. It was delicious! The kids devoured it like it was real cheese--and it even tricked Ashton who is able to sniff out the fake cheese these days. I sprinkled a little chili powder and Tabasco in it for a chili con queso flavor. I think the recipe is open to lots of variations to adapt it to your favorite cheesy recipes.
Cheesy Sauce from Five Loaves by Neva Brackett
½ c. cashews
2 Tbs. sesame tahini or sesame seeds
3 cups water
1 Tbs. lemon juice
1/3 c. pimentos or diced red peppers (canned)
½ tsp. Garlic
1 tsp onion powder
1 ½ tsp salt
2 Tbs. yeast flakes
1-2 Tbs. corn starch
Blend all ingredients very smooth. Place in a saucepan and bring to a boil while stirring. Can serve hot over broccoli, cauliflower, or other vegetables. Or drizzle over tortilla chips for nachos. Or fold into cooked macaroni (2 cups dry) for macaroni and cheese.
