Corn Fritters

2 cups self-rising white corn meal
1 1/3 cup rice or soy milk
1/4 cup oil
1 egg replacer for the equivalent of one egg (such as Ener-G Egg Replacer)
1/2 t garlic powder
1/2 t onion powder
1/2 cup frozen corn
Salt and freshly ground pepper to taste

Combine all ingredients and mix well. Add more frozen corn if you are feeling particularly corny. Lightly oil skillet over medium heat and drop spoonfuls of batter to make small patties. Turn when browned.

These have a nice cornbread consistency. They are great dipped or crumbled in soups.

These look really good and really easy. Too bad corn doesn't like me as much as I like it.
