1 t sugar
1 T melted butter
2 T oil
3 eggs
1 cup milk
3/4 cup flour
1/4 t salt
Whisk together wet ingredients and then add dry. Pour small amount of batter in hot, buttered skillet, tilting pan to coat. Flip crepe once it is almost dry on top and lightly brown on the edges. Cook an additional 15 seconds. Cover crepes with foil and keep warm in a 200 degree oven until ready to serve.
Angela Note: My second mom, Cheryl, gave me this recipe. It is a perfect base to add jam, Nutella, fruit, or just keep it simple with a little butter and a dusting of sugar & cinnamon. YUMMY!
