I had planned to make a really nice dinner last night in honor of our guests' arrival (Clayton's mom and aunt), but something came up last minute that kept me busy all day. So, I fed our company our regular gruel.
Cheese quesadillas with salsa
Black beans
Rice
Sour cream, guacamole, and Reina's supreme pico de gallo
Strawberries and banana
Pineapple Dream cake (aka Better Than Sex cake)

Here's the recipe for Hawaiian Haystacks:
2 cans cream of chicken soup or you could use cream of celery
1 cup chicken broth or you could use veg. broth
2 cups boiled and shredded chicken (optional)
1 can chow mein noodles
3 medium tomatoes, diced
1 cup chopped celery
1 cup chopped green pepper
1/2 cup chopped green onion
1 (20 oz) can pineapple tidbits
1/2 cup slivered almonds
1/2 cup grated coconut
2 cups grated cheddar cheese
cooked white rice
Combine soup and broth in pan and make a gravy. Add chicken and simmer until heated through.
Put rice and chow mein noodles in individual bowls. Then layer or "stack" on the toppings:
chicken and gravy
tomatoes
celery
green peppers
green onion
pineapple
grated cheese
almonds
coconut
Makes around 8 servings.
