My sister and I made cupcakes Friday in a mini-muffin pan for the art opening Saturday night. I just used a box cake mix for ease, but I wanted to make a frosting homemade. I found this recipe from the Magnolia bakery in NYC. It was creamy and delicious. We just used knives to slather it on, but I will now invest in some icing bags and tips to do some fancy-schmancy designs--especially now that I'm so into the mini cupcake thing. Imagine the possibilities!
Magnolia's Buttercream Frosting
1 cup unsalted butter, softened
6-8 cups confectioners' sugar
1/2 cup milk
2 teaspoons vanilla extract
food coloring if desired
Add 4 cups of the sugar and then milk and vanilla to a bowl with softened butter. Beat with an electric mixer for 3-5 minutes until creamy and smooth. Gradually add the remaining sugar, 1 cup at a time, beating well after each addition (about 2 minutes), until the frosting a good and thick spreading consistency. Add food coloring if desired. Store covered at room temperature up to 3 days.
